WIAW #2

Happy Wednesday! Welcome to WIAW post #2. I loved reading about everyone’s eats last week, and discovered some new great blogs! My blog breaks at work are getting a little longer. Thanks Jenn for hosting!

I started off the day with a cup of coffee and a green smoothie made of, spinach, kale, apple, pear, banana, chia seeds and a splash of OJ. I love green smoothies, they always taste so fresh and it’s a great way to pack in those greens for the day! I made enough to even have some later for a snack.

For lunch I had some green chile chicken stew from the Range Cafe, one of my favorite places here in Albuquerque. Could have used a little more chile, needed to turn up the heat a little bit, I like it HOT!

I sit at a desk for 12 hours a day and sometimes it’s hard not to head over to the kitchen when I need a break and grab a snack. I did pretty well today in the snack department. Had some mate to fight the 2:00 head bobbing, trying to stay awake and focused. That apple has been siting on my desk now for a week, decided it was time to eat it.

WIAW #2 eats

For dinner I had a piece of salmon on some leftover quinoa salad I made Sunday night and some baby kale. I love this baby kale, I use it in smoothies and salads all the time. I also bought a huge bag of it at Costco, so I am trying to eat as much as possible before it goes bad. I bought A LOT of baby kale!

Yesterday I also signed up for Monica’s Pile on the Miles. Which is an online challenge to walk or run more in November. You sign up, set a goal, log your weekly mileage on a shared Google doc, and get entered to win some sweet new running gear. My goal is 70 miles for the month on November, which is about 15-16 miles a week. Hope I win something because mama needs a new pair of shoes!
